Food from our Forest

This past Friday, students enrolled in Forests: food, medicine and more, made multiple dishes from plants found on the Domain. The class, taught every two years by Dr. Karen Kuers in the Earth and Environmental Systems Department, also investigates how local plants were and are used in making medicinals. Dishes served this past Friday included hickory milk, acorn flour banana bread with elderberry glaze, spicebush tea, and maple butter among many others.
